Simple Recipe Swaps to Keep Your Holidays Healthy

Just because it's the holiday season, doesn't mean you need to toss your healthy lifestyle over the next few weeks. 

You've done a lot of work lately in making healthy choices, eating right, moving your body, and staying hydrated. Don't give up now! With these simple recipe swaps, you can make even the most traditional holiday favorite and make it healthy.

Below, you find a complete 4-course meal, plus a cocktail, that will keep you on track while making spirits bright!

Poached Pear & Arugula Salad

This flavorful brightly colored includes baby arugula, red quinoa, craisins, toasted pecans, honey balsamic vinaigrette, giner poached pear, and shaved parmesan cheese. BONUS: you can use the extra pear juice to add healthy flavor to seltzers.

Chicken Tortilla Soup

This classic Mexican soup is loaded with flavor but light on calories and fat. Our version adds an extra dose of veggies to boost the vitamin and fiber content. You can use a store-bought rotisserie chicken, or leftover roasted chicken from the Roasted Double Chicken with Root Vegetables recipe to cut down on prep time.

Rosemary & Mustard Pork Tenderloin with Couscous

Herb & mustard roasted pork tenderloin on a bed of parslied couscous with honey balsamic roasted root vegetables. Recipe yields four (4) servings: 3 oz. of pork, 3/4 C roasted vegetables, and 1/2 C couscous per plate

 

Mocktails

Ho Ho Coco Mocktail:

  • Shake 2 oz. coconut milk and 2 oz. lime juice (fresh) and pour over ice in a glass. Fill with Coconut-flavored sparkling water and stir. Garnish with fresh mint.

Hoilday Faux Martini:

  • Mix 3 oz. Peach-Pear-flavored sparkling water with 1 oz. orange juice and 1/2 oz. agave syrup. Serve in a chilled martini glass and garnish with rosemary sprigs.
